Gluten Allergy – Cooking Gluten Free Mexican Food

Here in the United States, there seems to be a great deal of confusion about Mexican food. If you go to Mexico, the foods served include lots of ripe fruits and freshly eaten seafood. The tortillas are made by hand in small tortilla factories. There is a much greater variety of seasonings and dishes than are normally available here in the United States. In the same way that Chinese and Italian food have become Americanized, Mexican food has been appropriated and changed. Despite my purist convictions, however, I can not help liking the fusion cuisine called Tex Mex food. This blend of Mexican and Texan foods is unashamedly simple. Most of the recipes use one of several types of sauces with meat, beans and vegetables. As a busy mother, I have come to appreciate Tex Mex cooking as a great source of quick gluten free lunch ideas for my family.

In my home, most of these meals are centered around the corn tortilla. It's easy to get packaged corn tortillas and they will serve your purposes nicely. Should you find yourself with a bit more time and patience than I usually have, maseca brand masa harina (corn flour treated with lime) it's guaranteed gluten free. You can use it for making fresh tortillas, but it can also be used in tamales, pupusas and American casseroles like tamale pie. For most meals, however, I rely on the packaged tortillas and my family has never complained.

The most familiar uses for the corn tortilla involve deep frying. They can be cut into eighths and fried until crispy to use as chips. My kids are happy when I can give them gluten free lunch ideas that they are able to make themselves. They take homemade nacho chips, top with canned black beans & pre-shredded cheese, and melt in the microwave before topping with sour cream and olives.

The tortilla can be folded and fried to make traditional tacos, but without the basket to shape them, I find it to be too much trouble. We prefer to leave the tortilla flat and make tostada shells. These crispy wafers can be topped with traditional taco fillings, but also make a decent pizza with tomato sauce and mozzarella cheese. My personal favorite use for corn tortillas is a little more time consuming, but the results are always worth the trouble. Enchiladas are roled up corn tortillas, filled with vegetables, cheese or meat, and placed in a baking dish before smothering with delicious sauces and shredded cheeses and cooking until the cheese is golden. I love to have mine filled with a combination of ricotta cheese, mozzarella cheese and sauteed spinach with fresh garlic. My husband prefers a meatier filling and will often request chorizo, a spicy Mexican sausage. If rolling enchiladas for your family is too time consuming, as it often is in our household, then layering the tortillas, filling and sauce is efficient and just as tasty. We call that a “Mexican lasagne” in our house, though I've also seen it referred to as an “enchilada casserole”.

The most common ethen enchilada sauce in the United States is usually just referred to as “enchilada sauce”, which I do not find to be especially helpful. This chili powder and garlic spiked tomato sauce is generally flavorful without being too spicy, making it a popular option for kids. Enchiladas verdes, or “green enchiladas” are made with my favorite sauce. This sauce contains no red tomatoes, although occasionally the traditional tomatillo is stretched by adding unripe, green tomatoes to the recipe. The sauce is a very fresh tasting, moderately acidic flavor that is almost citrus-like. If it has a creamy component in the sauce as well, it is known as enchiladas suizas, or “Swiss enchiladas”. This is awfully tasty as well. Other enchilada sauces include the exotic mole sauce, which contains unsweetened chocolate and ground pumpkin seeds.

There are many popular variations on the enchilada casserole. Chili casserole layers the tortillas with lots of cheese and uses a chunky chili rather than enchilada sauce. After baking, the casserole can be topped with your favorite chili garnishes. In our house, we like black olives, pico de gallo (fresh salsa) and lots of sour cream. Another variant is known as brunch enchiladas. Along with the traditional fillings, gently scrambled eggs or sliced ​​hard cooked eggs are included in the layers. Many people also enjoy Italian enchilada casserole, using an herb and garlic season marinara instead of enchilada sauce and including Italian sausage in the filling. It's not my kids' favorite, but if you're bringing a dish to a pot luck with an Italian theme, it will fit in nicely without having to purchase expensive gluten free noodles .

Allergies Can Be Ended

For many decades, at least as long as I've been alive the common held belief is that if someone has allergies they must avoid anything they are allergic to in order to feel well. I remember feeling rather special growing up because I was not allergic to anything and every member of my family was allergic to one thing or another. At times I felt left out of the mix. One of my father's allergies was cat dander. He had violent reactions whenever a cat was around so our family did not get a cat. My dad went on a hunting trip with some of his buddies and my mom located the opportunity to bring home Keto. Dad was surprised when he got home to find a cuddly new addition to our family. Dad and Keto bonded very quickly and I remember very little allergic response. Dad got inflamed eyes maybe, a hand full of times through Keto's life but for the most part his allergic response was gone over night.

After watching my father's transition away from allergic responses I determined I would never have an allergic response as long as I live. I thought very early on that people could live without allergies it was not until recently that I wanted to figure out how.

Perhaps I was drawing just a conclusion from based on a correlation I observed but it appeared that allergies do have their up sides. An allergic reaction offers a physical excuse from activities the person may not want to partake in. I thought for sure that allergies started with an individual wanting something their suffering provided and it grew into a habit. Now this did not account for people who have allergic reactions and have no conscious control like an infant but that did not matter. I was researching the solutions for allergies. My intention was to work with hundreds of people in order to find a remedy that worked with allergies in general but was effective enough to end all symptoms. I did just that and this article describes one example of what I found.

Recently I met a woman who loves animals with every fiber of her being. All growing up she played with hamsters, dogs, and cats alike until about age 11. That year something happened to her health and she developed an allergy to plants and animal dander. Activities she took great pleasure in were beaten from her with vigor. One time she even had to be hospitalized.

When she and I met she was on 3 prescription medications and she would add an over the counter drug as well to deal with her issues. Getting through the day was more important to her than the combination of chemicals so she took them all despite the health risk.

The allergies were her, she owned them. She never thought they would ever leave because they were such a part of her life. When she went through a program I suggested she addressed many other situations like anxiety, relationships, stress, her love life and financial burdens were addressed but she not the impossible. She did not even consider her allergies. At the end of step 2 she had the same neurological shift that happens for everyone. She felt in control of every part of her life.

The next morning she left her meds in the cabinet. She was fine, there was no need to take them. In disbelief she kept them just in case the allergies came back again. Days passed then months and about 6 months after she followed my my suggestion she finally drew away the medications knowing and feeling that she had full control. She recovered from the allergies, they're not hers anymore. She now gets to pet animals and go for bike rides without dealing with Hay Fever.

The bottom line was she had to address her emotional attachments and burdens before she could be rid of allergies. Once she did her allergies were over forever.

Gluten Allergy Symptoms Encompass 3 Different Conditions

I often see the word gluten allergy symptoms used to describe an intolerance to gluten or a wheat allergy. However, a gluten intolerance and a wheat allergy are two different medical conditions. The term gluten allergy is a bit of a misnomer. Let me explain what that term might encompass and why it is not a useful way to describe the gluten phenomenon.

Wheat Allergy Symptoms

A wheat allergy is not a gluten intolerance; This is because a wheat allergy is a histamine response more like a traditional allergy, like hay fever or a peanut allergy. When people suffer from a wheat allergy, they are specifically allergic to wheat and not to the gluten which exists in more than just wheat. They are also likely to have a more immediate response to eating something with wheat in it.

Symptoms of a wheat allergy can include an itchy or swollen tongue, an itchy, sore throat, heartburn or indigestion, hives or a skin rash, headaches and kind of foggy mind feeling. There are more symptoms than this, but these are the symptoms that are most likely to occur right away.

Gluten Intolerance Symptoms

On the other hand, a person who has gluten intolerance may be able to eat a piece of wheat bread and not experience an immediate and obvious symptom. Gluten intolerance is an autoimmune disease not a food allergy. When someone has this gluten sensitivity, any kind and amount of gluten he or she eats will trigger his or her immune system to attack the small intestine with certain antibodies.

However, this attack can be gradual. Do not misunderstood here: this is a very serious condition and over time as these antibodies attack the lining of the small intestine (and its microvilli), the patient will develop very serious consequences. While the initial symptoms include gastrointestinal problems like gas, bloating, cramping, diarrhea and constipation, many more severe gluten allergy symptoms will occur in time, including diabetes, arthritis, ataxia and even cancer.

Celiac Disease

Until recently, if you had an intolerance to gluten, you had celiac disease. However, researchers and doctors now understand that you can test negative for celiac disease but still have a significant gluten sensitivity.

Celiac disease is basically a more severe form of gluten sensitivity where doctors are able to verify the presence of specific genes associated with the disease. Other than the context of the diagnosis and its greater severity, celiac disease is essentially the same thing as a gluten intolerance. That is, it is not a food allergy.

So you can see we have three separate conditions here, and none of them are really accurately represented by the term gluten allergy.

Allergy Symptoms Vs Cold Symptoms – Which Do You Have?

Even for doctors determining the difference between a cold and allergies can often be difficult. The symptoms are so closely related that they almost feel like the same thing, and both are prevalent year round (the dust mite allergy is more common in winter, as is this cold). So what's the difference between the two? A cold virus attempts to attack the body and naturally the body fights back.

When the immune system battles against the virus in an attempt to make you feel better it produces symptoms such as a runny nose and sore throat. Antihistamines and decongestants can often be used to alleviate cold virus symptoms (although they are designed for the dust mite allergy , pollen allergy etc.) but knowing the direct source and cause is no doubt the best answer. This will play a negative role towards both allergies and colds when you come off the supplement as both highly highly upon the body's immune system. The immune system does not have a chance to build up on its own relying on outside sources and therefore is very susceptible to a harmful agent such as a virus or bug.

Food Allergy – Basic

A food allergy, or hypersensitivity, is an abnormal response to a food that is triggered by the immune system. The immune system is not responsible for the symptoms of a food intolerance, even though these symptoms can recur those of a food allergy. For example, being allergic to milk is different from not being able to digest it properly due to lactose intolerance. There are two main ways that a food can cause othersome physical symptoms. The first category is what we call a food hypersensitivity.

These reactions occur when your immune system responds abnormally to proteins in specific foods. These immunologic reactions may be caused by IgE antibodies, which we refer to as food allergy, or may be related to mechanisms that do not involve IgE. Patients with food allergy due to IgE antibodies often have gastrointestinal symptoms (nausea, vomiting, diarrhea, and abdominal cramping), skin reactions (hives and eczema), and full-blown systemic reactions, also called “anaphylaxis” (throat swelling, wheezing, and drop in blood pressure). Food hypersensitivity that is not related to IgE antibodies includes a number of relatively rare disorders, such as food-induced enterocolitis (inflammation of the colon) and celiac disease (immune reaction to gluten).

The second large category of reactions is referred to as food intolerance reactions. These adverse responses to foods are reliably common and are not related to any immunologic mechanism. A good example is lactose intolerance.

Which Food Allergies Are Most Common?

Peanuts, soybeans, tree nuts, eggs, cow's milk, wheat, shellfish, and fish are the most commonly reported allergenic foods. Allergy to peanuts, soy, tree nuts, eggs, milk, or wheat often develop early in the first few years of life, while hypersensitivity to shellfish or fish more often manifests in adulthood. Allergy to milk or eggs frequently revolves between age 3 and 5 years, while allergy to peanut, tree nuts, shellfish, or fish often throughs a patient's lifetime.

Treatment for Food Allergies

Several important steps can protect a patient with serious food allergies from having future reactions. These steps include:

  1. Remove all sources of food that the patient is allergic to. Even trace amounts of a food protein can cause a severe reaction in some people. It can be particularly challenging to avoid foods that frequently show up in food items as hidden ingredients, such as peanuts.
  2. Be careful when dining out. Most inadvertent exposures to allergenic foods occur while eating in restaurants or in friends' homes.
  3. Do not eat foods with an unknown list of ingredients. For children with food allergies, it is very important to make all lunches and snacks that are taken to school or any out away from home.
  4. Wear a Medic-Alert bracelet to identify yourself as having a life-threatening allergy to food.
  5. Epinephrine is the single most important treatment for food-induced anaphylaxis. People with histories of systemic reactions to foods should have epinephrine available at all times, including in their backpack or purse, home, school nursing office, and car (s).

Allergies and Anaphylaxis

Anaphylaxis, otherwise known as allergic reactions are common and a real emergency. Some people are very allergic to things like bee stings. People who are deathly allergic to bee stains usually carry something called an auto-inject syringe. These auto-inject syringes inject a dose of a drug called Epinephrin into the patient. Epinephrine is the drug of choice for allergic reactions. Those who inject them with this Epinephrin should go to an emergency room immediately for care, just in case their symptoms worsen.

Allergic reactions take many forms. Some people sneeze and itch as in the person with a cat allergy. Others develop rashes called urticaria on their arms legs or trunk. Taking antihistamines like Dipphenhydramine (Benadryl) can usually take care of the rash.

Others develop a rash plus swilling of the airway. Swelling of the airway is a real emergency. If you or someone you are with develop symptoms such as swollen lips, swollen tongue, difficulty breathing or noise when they breath, they need to get to a hospital fast. Call 911 especially if your area has Paramedic level ambulances. The Paramedics carry the tools necessary to control an airway. They also carry the medications to reverse the allergic reaction and it's symptoms. I mention this because not all areas are equipped with advanced life support ambulances and personnel. Some areas, mostly rural, only have basic service. Call your local fire department or ambulance district and ask what type of service you would receive in an emergency.

It is common for ambulance personnel, urgent cares and hospital emergency rooms to see patients having allergic reactions. The patients vary in complaints from very minor itching and rash to severe with airway compromise. If a patient has a minor reaction they can usually be sent home after treatment with antihistamines and sometimes steroids. Others who have a more severe reaction may receive treatment with epinephrin, antihistamines, steroids and if necessary they may need an airway tube called an endotracheal tube. Intubation is when a doctor or paramamedic places an endotracheal tube down a patients airway into their lungs and assists there breathing with a bag and oxygen. This tube protects the patients airway from swapping closed.

People who know that they are seriously allergic to something like bee stings, shellfish, eggs, nuts, or latex should consult their doctor and find out what they should do in the event of an allergic reaction. Additionally, people with allergies should wear a bracelet or necklace alerting others of their allergy. This can be a time saving device in the event of an allergic reaction.
